Balsamic Salad with Turkey Patties

We are forever on the lookout for easy dinners we can do on weeknights. I have a student teacher right now, so I’m leaving work later. There is also a ton of fresh produce out and about right now to incorporate into salads. I definitely get bored quickly of salads, and am always looking for a way to spice them up. This salad is what I would call a “kitchen sink” salad because if it was in our veggie drawer, I chucked it in. Feel free to adjust the veggies I used for ones that you like!

Ground turkey is not the husbands favorite thing. He feels very similarly about them as I feel about pork chops. In an effort to try and get him to enjoy it, I took a spin on my mom’s turkey burgers. Instead of bell peppers and onions, I used thyme and lemon juice to make a fresh, summer patty that could be grilled or put on the stove.

Kitchen Sink Salad

  • Chopped red lettuce
  • Broccoli, finely chopped
  • Shredded carrots
  • Shredded red cabbage
  • 1/4 of a red onion, finely chopped
  • Cherry tomatoes
  • 1/2 cup balsamic
  • 1/2 cup olive oil
  • fresh basil, finely diced
  • salt/pepper

Combine basil, balsamic, olive oil, and a little salt and pepper. You can whisk it or pulse it with an immersion blender. Layer all the salad ingredients in a large bowl and toss (preferably with super fun cat utensils, but those are optional). If you are eating all the salad on the night you make it, toss the dressing in. If you’re like us and are eating this for a few days, toss salad in a separate bowl with dressing.

Thyme Turkey Patties

  • 1 lb ground turkey
  • Fresh thyme (between 1-2 tbsp, finely minced, have fun)
  • Juice and zest of a lemon
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • Salt/pepper
  • 1/2ish tsp garlic Powder (I didn’t actually measure this, sorry!)
  • 1/2ish tsp onion Powder

Combine all ingredients in a large bowl, and mix by hand. Mixing by hand makes sure that everything mixes evenly and you don’t get large clumps of panko in your patties.

Form 6 midsized patties and cook on the stove or in the oven until done. Serve alone or on a burger bun!

Seriously, these couldn’t get any easier! They made enough for dinner the next night, and tasted amazing all over again! The thyme brings a summer freshness to the turkey, and pack a big flavor punch for something so small!
